- 1 onion
- 1 garlic clove
- 100 grams starchy potatoes
- 100 grams Celery root
- 500 grams carrots
- 2 Tbsps Canola oil
- 4 Sage
- 600 milliliters Vegetable broth
- 80 milliliters Whipped cream
- 200 milliliters Apple juice
- salt
- freshly ground peppers
- 1 tsp lemon juice
- fresh Basil (for garnish)

Preparation steps

Trim and peel the onion, garlic, potatoes, celery and carrots and chop coarsely everything. Heat the oil in a saucepan and sauté the vegetables for 2-3 minutes. Add the sage leaves and cook briefly. Pour in the broth, cream and juice. Season with salt and pepper, and simmer for about 25 minutes until soft.

Then puree the soup fine with a hand blender. Add broth as needed or let reduce a little. Season with salt, pepper and lemon juice and distribute in soup bowls. Garnish to taste with freshly cut basil.
