½ yellow onion (sliced thin)
cup whole, blanched almonds
cup raw almonds
¼ cup raisins
¼ cup dried Cranberry

Preparation steps

1.
Pat the carp steak fillets dry then place on a plate to season. Sprinkle liberally with salt and pepper. Set aside until ready to cook.
2.
In a large sauté pan, heat olive oil until hot. Once hot, add the sliced onions to the pan and cook on high heat for 5 minutes. Reduce the heat to low and simmer the onions to caramelize them for 20-25 minutes, or until slightly brown.
3.
Next add both types of the almonds to the pan with the onions, along with the raisins and dried cranberries and continue to cook for 10 more minutes to warm through. Remove the onion mixture from the pan and set aside.
4.
Using the same sauté pan, heat it again over a high flame. Add the fish steaks and cook on each side for 4-5 minutes, or to your desired doneness.
5.
Remove the fish from the pan and arrange them on a platter. Top them with the onion mixture and serve immediately.
