2 ⅔ cups whole-wheat bread flour
1 ⅔ cups white Bread flour
1 cup Walnut
½ cup raisins
2 Tbsps brown sugar
2 tsps easy bake Yeast
3 Tbsps Walnut oil (or sunflower oil)

Breadmaker method; Adust the above ingredients in the following way; Use 350g 12oz wholemeal bread flour 150g 5oz strong white bread flour 1 Tsp easy bake yeast 350ml warm water (all other ingredients remain the same) 1 Put all the ingredients into the bread maker bucket, following the manufacturers instructions. 2 Fit the bucket into the breadmaker and set to the raisin programme, if appropriate, with a light crust. 3 Press start. Half way through kneading add the raisins.

Preparation steps

Put the wholemeal and white flours into a bowl with the walnut pieces, sugar and 1.5 tsp salt.

Sprinkle over the yeast, then pour in the oil and 450 ml of warm water.

Mix together with your hands until the mixture forms a rough ball.

Tip the dough onto a lightly floured surface and stretch and knead the dough for 10 minutes until smooth and elastic and knead in the raisins.
5.
Shape the dough into an oblong and put into a greased 900 g | 2 lb tin.

Cover loosely with clear wrap and leave in a warm place until doubled in size. This will take about 30-40 minutes.
7.
Heat the oven to 220°C (200° fan) 425F gas 7.

Remove clear wrap from the bread, and reduce the oven temperature to 200°C (180° fan) 400F gas 6.
9.
Bake the bread for 35 minutes until golden. To test to see if the loaf is ready, tip out of the tin, knock base, it should sound hollow.
