Caprese Salad with Avocado
This traditional Italian caprese salad comes with a twist in the form of avocado, which adds a creamy texture and plenty of heart-healthy fats.
Because this recipe relies on relatively few ingredients, make sure to use high-quality olive oil and balsamic vinegar for maximum flavor.
Rinse the tomatoes, remove the core, and cut into slices. Peel and halve the avocado. Remove the seeds, and cut into slices. Drain and slice the mozzarella. Rinse and dry the arugula, then tear into bite-sized pieces.
Mix the oil with the balsamic vinegar, and season to taste with salt and pepper.
Layer the mozzarella, avocado, and arugula to form 4 towers. Drizzle inbetween the layers with the dressing, secure with a skewer, and serve with the remaining dressing.
