- 4 stalks sturdy, fresh rosemary
- 4 large, ripe Tomatoes (washed; trimmed and thickly sliced)
- 12 ozs fresh Buffalo mozzarella (sliced into 12 slices)
- 3 Tbsps good-quality olive oil (plus extra if desired)
- ⅛ tsp Sea salt
- ⅛ tsp freshly ground Black pepper
- tender Baby greens (to garnish)
- toasted, crundchy Bread to serve (optional)
Preparation steps

Remove leaves from the rosemary stalks, leaving a sprig of leaves at the top for decoration.

Thread the sliced tomatoes and mozzarella (alternating) onto the prepared rosemary stalks. Arrange skewers on salad plates; drizzle with olive oil and season to taste with salt and freshly cracked pepper. Garnish with baby greens and serve with crusty bread, if desired.
