300 grams shrimp (ready to cook, peeled and deveined)
1 red chili pepper
1 garlic clove
2 Tbsps olive oil
1 red onion
2 Avocados
100 grams Crème fraiche
1 tsp Wasabi paste
½ Lime (juiced)
salt
cayenne pepper
8 slices Toast
freshly ground peppers
scallions (for garnishing)

Preparation steps

1.

Rinse shrimp, pat dry and cut into pieces. Rinse and halve chile pepper, remove seeds and chop. Peel garlic and cut into slices. Heat oil in a pan and saute garlic, chile and shrimp until done. Remove from heat and cool.

Peel onion and chop very finely. Peel avocado, halve and pit, crush finely with a fork. Combine with onion and 2-3 tablespoons of crème fraîche. Season with wasabi, lime juice, salt and pepper.

Puree shrimp with remaining crème fraîche in the blender. Season with lime juice, salt and cayenne pepper to taste.

Cut out 12 circles out of bread slices (about 6 cm in diameter) (approximately 2. inch) and toast until crispy. Top each circle with avocado cream and shrimp mousse. Season with pepper and serve garnished with scallion strips.
