100 milliliters olive oil
1 garlic clove
1 tsp lemon juice
2 Tbsps White vinegar
½ tsp sharp Mustard
1 tsp Worcestershire sauce
1 egg yolk
1 Tbsp grated Parmesan

1 pinch sugar
50 grams Salami
300 grams Lettuce (such as romaine)
40 grams freshly grated Parmesan (to sprinkle)
100 grams air-dried ham

Preparation steps

Remove crusts from the white bread, dice and cook in 2 tablespoons hot oil 2-3 minutes until golden brown and crispy. Drain on paper towels.

For the dressing, peel the garlic, combine with the lemon juice, vinegar, mustard, the Worcestershire sauce, egg yolk and Parmesan in a blender jar, incorporate the remaining oil and mix until white-creamy. adding a little water if necessary. Season with salt, pepper and sugar. Cut the salami cut into strips.

Brush the lettuce, rinse, spin dry and tear small. Arrange on plates or in bowls and drizzle with the dressing. Distribute croutons, salami and Parmesan and arrange the ham decoratively on top. Serve garnished with pepper.
