Preparation steps

Rinse the tomatoes and remove the stems. Rinse the cucumber and cut into 2 cm (approximately 1 inch) cubes. Rinse the peppers, cut in half, remove the seeds and ribs and cut into strips. Rinse and trim the scallions and cut the white part into thin rings. Chop the green part. Peel the onion, halve and cut into thin slices.

Mix the vegetables together and lightly season with salt and pepper. Mix with vinegar, parsley and oil. To serve, arrange on plates and crumble the feta cheese over the top.
