2 cups sheep cheese (ewe's)

1 cup Quark (well drained)
1 tsp salt
16 ozs Puff pastry dough (or phyllo dough)

1 egg yolk

Preparation steps

1.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and brush a spring-form tin with butter.

Mix the yoghurt with the bicarbonate of soda. Mash the ewe's cheese with a fork. Beat the eggs until frothy, then add the quark, ewe's cheese, salt and yoghurt and mix well.

Unroll the pastry and brush each sheet with a little butter. Spread around 3 tbsp of cheese mixture over the pastry sheet and roll up from the long side. Repeat the process until all the sheets are used up. Arrange the rolls of pastry in a spiral in the tin.
4.
Whisk the egg yolk with 2 tbsp water and brush over the banitsa. Bake in the oven for 35-40 minutes until golden brown.
