- 2 Tbsps cilantro
- 2 sticks Leeks
- 1 Tbsp vegetable oil
- 800 milliliters Chicken broth
- 200 grams Wide rice noodle
- 1 splash Lime juice
- 2 tsps light soy sauce

Preparation steps

Rinse the chile pepper, cut in half lengthwise, remove the seeds and finely chop the flesh. Rinse the cilantro, shake dry and pluck the leaves from the stems.

Rinse the leeks and cut into thin rings. Heat 1 tablespoon oil in a large pot, sauté the leek about 2 minutes, deglaze with the broth and cook for 3 minutes. Add the rice noodles and cook 8-10 more minutes. Season with lime juice and soy sauce. Pour into a small bowl and serve garnished with chopped chile pepper and cilantro leaves.
