6 slices white bread
4 Tbsps freshly chopped parsley
1 Tbsp freshly chopped thyme
50 grams butter
salt
freshly ground peppers
100 grams freshly grated Cheddar cheese
5 Tbsps breadcrumbs (for topping)

Preparation steps

Preheat broiler.

With an oyster knife, open oysters and place on a baking sheet. Sprinkle with sea salt. Peel and finely chop onion and garlic. Remove crust from bread and coarsely crumble. In a food processor, process bread with herbs until finely ground. In a pan, cook onion and garlic in 1 tablespoon melted butter until translucent. Add remaining butter, heat until melted and remove from heat. Stir in herbed breadcrumbs and season with salt and pepper. If mixture is too dry, add a little more butter.

Divide breadcrumb mixture over oysters, sprinkle with grated cheese and sprinkle with additional plain breadcrumbs. Broil, watching carefully, until topping is golden.
