7 Tbsps olive oil
2 handfuls parsley
100 grams breadcrumbs
1 tsp lemon zest
50 grams grated pecorino romano (or Parmesan)

Preparation steps

Rinse the mussels under running water and remove any opened shells. Place in a large pot and cover with water. Cover, bring to a boil and cook until the shells open (discard unopened shells). Sprinkle a baking sheet with about 1 cm (approximately 1/2 inch) of coarse salt. Separate the shell halves and place the halves with the cooked mussel meat on the salt on the baking sheet.

Preheat the oven's broiler. Peel the garlic, finely chop, and sauté briefly in hot oil. Rinse the parsley, shake dry, remove the leaves and chop finely. Mix with the garlic, breadcrumbs, lemon zest, and pecorino. Season with pepper and a little salt. Place some of the mixture on each mussel half. Cook the mussels under the broiler, watching carefully to avoid burning. Place on a platter and serve immediately.
