- 1 large Fennel bulb
- 2 Red onions
- 2 white onions
- 250 milliliters dry white wine
- 1 sprig rosemary
- 2 garlic cloves
- 1 tsp Juniper berries
- 1 tsp peppercorns
- salt
- freshly ground peppers
- 2 Tbsps olive oil
- 1 Tbsp freshly chopped rosemary

Preparation steps
1.
Rinse, trim and quarter fennel. Peel and halve onions. Place both in a baking dish. Add wine, a sprig of rosemary, a garlic clove (peeled and pressed through a garlic press), juniper and peppercorns. Cover and marinate overnight, turning vegetables occasionally.
2.
Line a roasting pan with aluminum foil. Place onions and fennel in pan and season with salt and pepper. Drizzle with oil.
3.
Broil, watching carefully and turning vegetables occasionally, about 20 minutes.
4.
Serve vegetables sprinkled with rosemary.
