9 ozs Savoy cabbage
1 garlic clove
2 Tbsps olive oil
5 ozs dry white wine
2 handfuls Arugula
salt
freshly ground peppers
2 tsps lemon juice
½ tsp lemon zest (organic)
8 thin slices Ciabatta
7 ozs Mozzarella
Red pepper flakes
balsamic vinegar (for drizzling)

Preparation steps

Rinse cabbage, remove core and cut into thin strips. Peel and finely chop garlic. In a pan, fry garlic in hot oil. Stir in cabbage and cook briefly. Deglaze with wine and simmer gently until liquid has completely evaporated, 7-10 minutes. Meanwhile, rinse arugula, spin dry and coarsely chop. Stir arugula with cabbage, remove from heat and season with salt, pepper, lemon juice, and lemon zest.

Preheat broiler.

Broil ciabatta slices, watching carefully, until crisp, 1-2 minutes. Cut mozzarella into cubes. Remove ciabatta slices from oven, spread with cabbage mixture and top with cheese. Broil until cheese has melted, about 4 minutes. Sprinkle with paprika flakes, drizzle with balsamic vinegar and serve immediately.
