Broccoli Salad with Yogurt Dressing
Rinse broccoli and cut into florets. Rinse and dry tomatoes and scallions. Cook broccoli in boiling salted water until al dente, drain and rinse with cold water. Drain again. Cut tomatoes in half.
Cut scallions into rings. Combine lemon juice, yogurt and 3 tablespoons of oil. Season with salt and pepper. Combine broccoli, tomatoes and scallions, drizzle with sauce and serve.
