1 cup self-rising flour
½ tsp Baking powder
2 Broccoli (cooked and finely chopped)
2 Tbsps grated Cheddar cheese
¼ cup butter (melted and cooled)
½ cup milk
1 egg (lightly beaten)

Preparation steps

1.
Heat the oven to 190°C|170°C fan|375°F|gas 5. Put 12 mini muffin cases into a mini muffin tray.
2.
Sieve together the flour and baking powder. Stir in the broccoli and cheese.
3.
Beat together the butter, milk and egg and add to the flour mixture. Stir until just combined.
4.
Spoon into the prepared cases and bake for about 10 minutes until risen and golden brown.
