4 Turkey cutlets (each about 150 grams)
salt
freshly ground peppers
3 Tbsps Pastry flour
1 egg
5 Tbsps breadcrumbs
3 Tbsps clarified butter
1 lemon (cut into wedges)
parsley (for garnish)

Preparation steps

1.

Heat the jelly in a small saucepan. Rinse the turkey cutlets, pat dry, place on a plate and brush with the jelly. Season with salt and pepper.

2.

Dredge the cutlets in flour, then in the whisked egg and then in the breadcrumbs, pressing well to coat.

3.

Heat the clarified butter in a large frying pan and cook the cutlets on each side for 3-4 minutes. Drain on paper towels and serve hot garnished with lemon and parsley. Serve with a fresh mixed salad.
