1 Tbsp olive oil
1 Tbsp butter
1 onion (finely chopped)
1 red Bell pepper (seeds removed and finely chopped)
1 clove garlic cloves (finely chopped)
1 ¼ cups Risotto
1 Tbsp chopped oregano (plus extra to garnish)
5 ½ cups hot vegetable stock
salt

7 ozs canned Sweet corn (drained)
3 large eggs
1 cup all-purpose flour
1 cup dried breadcrumbs

Preparation steps

1.
Heat the oil and butter in a wide shallow pan. Add the onion and pepper and cook gently for 4-5 minutes, until softened. Add the garlic and rice and stir well.

Add the oregano and enough hot stock to just cover the rice, season to taste and simmer gently, stirring frequently, until the rice has absorbed the liquid. Repeat until all the stock has been used and the rice is tender and creamy. Set aside to cool.

Stir in the sweetcorn and 1 egg and mix well. Shape into 12 round cakes. Put on a baking tray lined with non-stick baking paper and cover with cling film. Chill for at least 20 minutes.

Heat the oven to 200°C (180° fan) 400°F gas 6.

Beat the remaining eggs in a shallow dish. Put the flour and breadcrumbs on 2 large plates. Coat the cakes in the flour, then the egg, then finally the breadcrumbs.

Place on the baking tray and bake for 10-15 minutes, until golden. Garnish with oregano and lemon wedges.
