- 4 Pork chop
- salt
- freshly ground Black pepper
- 1 Tbsp olive oil
- 2 Tbsps Dijon mustard
- 1 ½ cups grated Parmesan
- ½ cup breadcrumbs
- 1 Tbsp chopped Sage
- 1 Tbsp chopped rosemary

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line a baking tray with non-stick baking paper.
2.
Season the chops with salt and pepper and score the fat with a sharp knife.
3.
Heat the oil in a frying pan and quickly brown the chops on both sides. Remove from the pan and brush with mustard.
4.
Mix together the remaining ingredients and place in a shallow dish.
5.
Lay the chops in the dish to coat, then turn over and coat the other side.
6.
Place on the baking tray and cook for 20-30 minutes (depending on thickness) until cooked through.
7.
Serve with new potatoes and spinach.
