- 800 grams Pumpkin (such as Hokkaido)
- fine Sea salt
- freshly ground peppers
- Nutmeg (freshly grated)
- 2 eggs
- 3 Tbsps mixed, chopped Fresh herbs (such as borage, dill, and parsley)
- Pastry flour (for dredging)
- 2 Tbsps clarified butter (for frying)
- 4 Tbsps olive oil
- 2 Tbsps White vinegar
- 4 finely chopped Radish

Preparation steps

Peel, core and cut pumpkin into 1/2 cm (approximately 1/4 inch) slices. Sprinkle slices on both sides with salt and let stand until water is drawn out, about 30 minutes. Pat dry with paper towels and season with pepper and nutmeg. Beat together eggs with herbs. Dredge pumpkin slices first in flour, then dip in beaten egg. Fry in melted butter over medium heat until golden on both sides.

To make vinaigrette, whisk together oil, vinegar, salt and pepper to taste, and radishes. Drizzle pumpkin slices with vinaigrette and serve with fresh herbs.
