Breaded Melon with Banana Salad
- For the melon
- 4 slices honeydew melon (each 1.5 cm)
- 2 tablespoons Pastry flour
- 1 egg
- 80 breadcrumbs
- 2 tablespoons brown sugar
- vegetable oil (for frying)
For the melon, pat melon slices dry and coat with flour. Whisk the egg. Dip slices in the whisked egg. Mix breadcrumbs with the sugar and roll the slices in the mixture. Fry in the hot oil on each side until golden brown, about 2 minutes. Drain on paper towels.
For the salad, peel bananas and slice. Mix the yogurt with the lemon juice, honey and lemon balm. Fold in the bananas. Arrange salad on plates with melon slices and garnish with lingonberries before serving.
