- 1 slice stale white bread
- 2 garlic cloves
- 1 generous pinch ground Saffron
- ½ tsp Sea salt
- 1 egg yolk
- 1 generous pinch sharp Mustard
- 200 milliliters olive oil
- 1 generous pinch Tomato paste
- 1 tsp lemon juice
- white peppers
Preparation steps

Soak the bread in warm water. Peel the garlic cloves and crush with the saffron and salt in a mortar and pestle Squeeze the moisture out of the bread and thoroughly combine with the spice mixture. In a separate bowl, stir the egg yolks with the mustard, and then gradually whisk in the oil until the mixture is emulsified. Stir the bread and spice mixture into the oil mixture along with the tomato paste. Season with the lemon juice and pepper.

Serve as a spread for crusty white bread.
