600 grams firm potatoes
salt
150 grams cooked Beets (vacuum-packed)
3 onions
2 Tbsps clarified butter
freshly ground peppers
1 Tbsp freshly chopped parsley
2 Tbsps vegetable oil
4 coiled sausages
200 milliliters Whipped cream
1 tsp Caraway
marjoram (for garnish)

Preparation steps

1.

Rinse potatoes and cook about 25 minutes in salted boiling water. Drain and rinse under cold water. Remove skins and let cool. Cut the beet into thin strips. Peel onions and thinly slice.

Slice potatoes and fry in butter over high heat until golden-brown. Season with salt and pepper and stir in parsley.

In a second pan, fry sausages in oil until golden-brown on all sides. Remove from pan. Heat oven to 80°C (approximately 175°F).

4.

Cook onions in the pan with the fat remaining from the sausage. Add beet and deglaze with cream. Simmer 3-4 minutes and season with salt, pepper and caraway seeds.

5.

Divide the potatoes, sauce and sausages among plates and garnish with marjoram.
