2 Fennel bulb
2 sticks Celery
2 carrots
2 Parsnips
1 kilogram Beef (prepared by the butcher)
salt

4 Tbsps vegetable oil
50 grams Bacon (diced)
allspice
peppercorns
2 bay leaves
500 milliliters Beef broth

Preparation steps

1.

Rinse the fennel, remove the stalk and cut bulb into wedges.

Rinse celery, trim and cut diagonally into pieces.

Peel carrots and parsnips and cut into chunks.

4.

Rinse the beef, pat dry and season with salt and pepper. Fry in 2 tablespoons hot oil in a Dutch oven on all sides and take out of the Dutch oven.

Sauté the bacon in the remaining oil. Add the vegetables and sauté with the bacon until browned. Add allspice, peppercorn and bay leaves and deglaze with a little broth. Place the meat on the vegetables. Cover and cook approximately 2-2.5 hours over low heat. As needed, gradually pour in remaining broth and turn the roast over occasionally. Season with salt and pepper and serve.
