- 8 cups Farfalle
- salt
- 1 cup chicken stock
- 2 Chicken breasts (approx. 160 g)
- ½ cup unsalted Cashews
- 2 Tbsps Pine nuts
- 1 green Bell pepper (deseeded and diced)
- 1 cup cherry Tomatoes (halved)
- 1 Cucumber (sliced)
- For the dressing
- 1 tsp hot Mustard
- 6 Tbsps olive oil
- 4 Tbsps white wine vinegar
- 1 Tbsp Yogurt
- 1 pinch dried oregano
- lemon juice
- salt
- White pepper

Preparation steps
1.
Cook the pasta according to the pack instructions until al dente. Drain and allow to cool.
2.
Heat the chicken stock in a pan and add the chicken. Bring to a boil and simmer for 10 minutes until cooked. Remove the chicken and allow to cool. Cut into thin slices.

Heat a frying pan and toast the cashews and pine nuts. Allow to cool.
4.
Mix the pasta with the chicken and the vegetables.
5.
For the dressing: Whisk together the mustard, oil, vinegar and yoghurt until it thickens. Add the oregano and season to taste with lemon juice, salt and pepper.
6.
Place the salad on plates, drizzle over the dressing and sprinkle with the nuts.
