Boozy Pudding Cups
Place the evaporated milk in the freezer for 15 minutes.
Cut four fine slices from the crystallized ginger for garnish and chop the remainder.
Add the juice of the lime to the rum.
Pour the evaporated milk into a bowl and whip until softly peaked. Add the lime and rum juice whilst continuing to whip.
Gradually add the double cream and sugar a little at a time, whipping continuously. Add the lime zest and chopped ginger.
Pour into four glasses and garnish with ginger. Serve immediately.
