- 450 grams Blueberries
- 100 milliliters dry white wine
- 60 grams sugar
- 40 grams Glucose
- 3 drops Almond extract
- 1 Tbsp lemon juice
- 1 Tbsp chopped almonds
- 50 grams almonds
- Lemon balm (for the garnish)

Preparation steps

Rinse blueberries, puree in a blender and pass through a fine sieve. Boil white wine with sugar and glucose. In a bowl, mix blueberry puree, wine mixture, some almonds and lemon juice and cool down in the fridge at 5-7°C (approximately 40-45°F). Freeze in an ice cream machine according to the manufacturer's instructions. In the last few minutes add the chopped almonds.

Meanwhile, coarsely chop remaining almonds and toast in a dry skillet. Allow to cool. To serve, scoop sorbet onto a plate, sprinkle with toasted almonds and garnish with lemon balm.
