- For the pancakes
- 1 ½ cups all-purpose flour
- 1 Tbsp Baking powder
- 1 tsp superfine caster sugar
- 1 pinch salt
- 2 large eggs (beaten)
- 1 ⅓ cups milk
- ⅛ cup unsalted butter (melted and cooled)
- ¼ cup unsalted butter (for frying)
- To serve
- ⅛ cup unsalted butter (cut into 4 even portions)
- ⅔ cup Blueberries
- ⅜ cup Maple syrup

Preparation steps

In a large mixing bowl, combine the flour, baking powder, sugar and salt and mix well. Make a well in the center and whisk in the eggs, milk and melted butter until you have a smooth batter.

Transfer the batter to a jug and let it sit for 20-30 minutes before using.

After 20-30 minutes, heat a small frying pan over a medium heat for 1 minute until it is hot and melt a knob of butter in it. Give the batter a quick stir before pouring a little for each pancake into the pan. When the surface starts to blister after roughly 1 minute, flip the pancakes to cook the other side, pressing down a little to ensure even cooking.

Transfer to a plate lined with foil and keep in a warm place until serving. Continue cooking in this fashion until all the batter has been used up.

Arrange in stacks on serving plates, then place a piece of butter and a small handful of blueberries on top. Pour some of the syrup around the pancakes before serving.
