- 300 grams mixed Berry
- 8 sheets white gelatin
- 250 milliliters Currant juice
- 80 grams sugar
- 2 Tbsps lemon juice
- 1 Sponge cake base
- 200 grams Whipped cream
- 1 Tbsp powdered sugar

Preparation steps
1.
Rinse berries, trim and drain. Soak gelatin in cold water.
2.
Heat 50 ml (approximately 1/4 cup) of juice with sugar and lemon juice. Add gelatin and dissolve. Pour in remaining juice and stir in berries. Cool in refrigerator for about 30 minutes or until mixture starts to gel.
3.
Cut a bottom cake layer from sponge cake measuring 17.5 cm (approximately 7 inches) in diamater. Beat cream until stiff and fold into berry mixture.
4.
Spread about 1/3 of cream on bottom cake layer. Add a smaller cake layer and spread with remaining cream. Top with cake crumbles and chill for 4 hours. Sprinkle with powdered sugar before serving.
