1 cup Agave syrup
3 eggs
3 Tbsps melted butter
finely grated lemon zest
1 Tbsp Almond extract
3 cups all-purpose flour
1 tsp baking soda
1 cup freeze-dried Raspberries (or dried cranberries or cherries)
½ cup Shredded coconut

Preparation steps

1.
Heat the oven to 180°C/160°C fan/350°F/gas 4.
2.
Put the agave nectar and eggs into a bowl and whisk together until thick and pale. Whisk in the butter, lemon zest and almond extract. Stir in the flour and bicarbonate of (baking) soda together with the raspberries and coconut.
3.
Shape into two oblongs each 26cmx10cm. Place on a baking tray and bake for 20 minutes.
4.
Remove from the oven and cool for a few minutes. Then slice each loaf at an angle into 1cm slices.
5.
Arrange the slices on baking trays and return to the oven for another 10 minutes, turning the slices over halfway through the cooking time. Cool on a wire rack.
