- 3 eggs
- ½ cup light brown sugar
- ½ cup caster sugar
- 2 cups all-purpose flour
- 1 cup self-rising flour
- ⅓ cup cocoa powder
- 2 Tbsps melted butter
- 3 ½ ozs Dark chocolate (60% cocoa solids, roughly chopped)
- 1 cup chopped Pecan

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.
2.
Whisk the eggs and both sugars in a mixing bowl with an electric mixer until thick and pale.
3.
Sift in the dry ingredients and stir in the melted butter. Add the chocolate and pecans and mix to a firm dough.

Gently knead the dough on a floured surface until smooth and divide in half. Shape each half into a 7cm x 20cm|3" x 8" log. Place the logs on the baking trays and bake for 20-30 minutes until firm. Cool on the trays for 30 minutes.
5.
Cut each log on an angle slices with a serrated knife. Space the biscuits slightly apart and return to the oven for a further 15 minutes until lightly golden, dry and crisp. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
