- 3 cups Gooseberry (topped and tailed)
- 2 cups Cherries (pitted)
- 4 ½ cups preserving sugar (1:1)
- juiced and zested lemons (from one lemon)

Preparation steps
1.
Mash one half of the gooseberries and one half of the cherries with a fork to a coarse puree.
2.
Mix all the fruit with the preserving sugar and allow to steep for at least 3 hours.
3.
Bring the fruit mixture to a boil slowly while stirring. Bring to a rolling boil and cook for 20 - 30 minutes until the temperature reaches 105C/220F.
4.
To sterilize the jars fill with boiling water and let stand for 5 minutes. Discard the water and fill the jars with marmalade.
5.
Turn the bottles over to rest on their caps for 10 minutes. Then turn the bottles upright and allow to cool.
