Ingredients

For the dough
200 grams Pastry flour
80 grams butter
1 egg
4 Tbsps milk
For covering
Bell pepper (1 red, yellow and green, trimmed, cored and cut into small cubes)
2 shallots (finely chopped)
3 garlic cloves
200 grams Dry sausage (thinly sliced)
2 Tbsps vegetable oil
1 tsp mild Curry powder
salt
freshly ground pepper
Nutmeg
200 grams Whipped cream
4 eggs
150 grams Gruyere (grated)

Preparation steps

1.

Knead the pastry flour, egg, ½ teaspoon salt, milk, and small pieces of butter quickly into a smooth dough. Roll in between two pieces of parchment paper until thin. Butter a quiche mold, line it with the dough and cover refrigerated  for about 30 minutes.

Sweat the shallots in the oil until soft, then add the diced bell peppers. Press the garlic through a press, add it to the pan and cook until everything has softened. Add the curry powder, and season with salt and pepper.

Whisk the cream with the egg, stir in the cheese, and season with salt, pepper and nutmeg.

4.

Divide the vegetables and the  sliced sausage equally onto the dough and pour the egg mixture over them.

5.

Preheat the oven to 180°C (approximately 350°F). Bake the quiche for about 45 minutes,  or until golden brown.
