1 ⅕ kilograms baby Beets (with greens)
5 Tbsps olive oil
Sea salt
1 Red onion
250 grams Feta
4 Tbsps white balsamic vinegar
freshly ground peppers

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Rinse the beet and chop the leaves. Wipe clean and spin dry. Place the beets on a bking sheet, drizzle with 2 tablespoons of oil, and season with salt. Roast in the oven for 30 minutes, until soft. Remove from the oven and let cool to room temperature.

Peel and finely dice the onion. Peel and halve the beets. Arrange the beets on plates with the beet greens. Sprinkle with the onions, then crumble the cheese over the top. Drizzle with the vinegar and remaining oil. Season to taste with salt and pepper, and serve.
