- 750 grams Sirloin steak

- 2 Tbsps olive oil
- 2 Tbsps freshly chopped parsley
- 1 Tbsp freshly chopped cilantro
- 150 grams softened butter
- 4 Tbsps breadcrumbs
- 1 egg yolk
- 40 grams chopped Walnut

Preparation steps

Preheat the oven to 160 ° C upper and lower heat.

Rinse and pat dry meat, season with salt and pepper. Heat oil in a pan and sear meat on both sides on high heat. Place into a roasting pan and bake in preheated oven at 160°C (approximately 325°F) for about 30-45 minutes, depending on thickness of meat.

Combine herbs with butter, breadcrumbs, egg yolk, and nuts, mix well. Season with salt and pepper. Spread mixture on meat about 5 minutes before the end of cooking. Remove from oven and let stand for a few minutes. Serve.
