Beef Fillets with Pumpkin and Onion
Peel potatoes. Cut potatoes and pumpkin lengthwise into columns. Place on a baking sheet with diced garlic. Sprinkle on thyme and season with salt and pepper. Drizzle with olive oil and bake in a preheated oven at 200°C (approximately 400°F) for 30 minutes or until golden brown.
Cook fillet strips in hot oil for 4-5 minutes on both sides. Adjust cooking time as needed to reach desired temperature. Remove from heat, season with salt and pepper and let rest for 2 minutes. Serve fillet strips on warmed plates with vegetables.
