- 2 pcs Beef fillet about 200 grams (approximately 7 ounces)
- 2 Pear
- juice of 1 lemons
- 20 grams clarified butter
- 250 milliliters dry white wine
- 1 Tbsp vegetable oil
- 1 Tbsp butter
- 200 milliliters Veal stock
- 2 Tbsps Cranberry compote
- salt
- freshly ground peppers
- 1 sprig rosemary

Preparation steps

Rinse the fillets, pat dry and season with salt and pepper. Rinse the pears, peel and drizzle with lemon juice. Heat the clarified butter in a large pan and sauté the pears briefly. Add the wine to the pan and simmer the pears for 12-15 minutes, until tender. Remove from the pan and cover to keep warm.

Heat the vegetable oil and butter in a pan and sear the fillets for 3-4 minutes on each side. Remove the fillets from the pan and cover to keep warm. Deglaze the pan with the veal stock and simmer until reduced by about half. Stir in the cranberry compote and season with salt and pepper.

Plate the fillets with the poached pears and drizzle with sauce. Garnish with fresh rosemary.
4.
Serve with your choice of vegetables and/or potatoes.
