- 5 sheets Phyllo dough
- 1 Tbsp olive oil
- ¼ cup onions (diced)
- 1 tsp minced garlic cloves
- 1 cup cooked Ground beef
- 1 cup Corn kernel
- 1 Zucchini (cut in half lengthwise then sliced)
- 2 Tbsps Sour cream
- 1 Tbsp fresh parsley (rough chopped)

Preparation steps
1.
Preheat oven to 400º F / 205º C and grease a 6 inch ramekin.
2.
Press the phyllo dough into the bottom of the ramekin and up the sides. Let the edges just hang over. Blind bake for 15 minutes.
3.
In a large skillet, heat the olive oil. Add onion and saute until soft, about 4 minutes. Add garlic and cook for another minute. Add the ground beef, corn and zucchini and stir gently to incorporate.
4.
Spoon beef mixture into cooled phyllo shell. Bake for 15 minutes. Garnish with sour cream and parsley.
