2 Tbsps vegetable oil
1 large sweet onion (thinly sliced)
flour (for work surface)
1 sheet Puff pastry thawed (half of a 475 g | 17 oz package)
2 Tbsps water (for brushing)
1 ½ cups shredded Gruyere
¼ cup grated Parmesan
4 Tbsps chopped, fresh Chives

Preparation steps

Preheat the oven to 400°F / 200ºC. Line a baking sheet with parchment paper.

Heat oil in a 12-inch skillet over medium heat. Add the sliced onion and cook for 15 minutes or until well browned, stirring often. Remove the skillet from the heat and let cool to room temperature.

Sprinkle the work surface with the flour and unfold the pastry sheet. Roll the pastry sheet into a 12-inch square. Carefully, place the pastry onto the baking sheet. Brush the edges of the pastry with water. Fold over the edges 1/2-inch on all sides, crimping with a fork to form a rim. Prick the center of the pastry thoroughly with the tines of a fork. Sprinkle with the cheeses and chives. Spread the onion mixture on the pastry to the rim.

Bake for 20 minutes or until the pastry is golden brown. Transfer baking sheet to a wire rack and let cool 5 minutes. Cut and serve warm.
