- 600 grams Beef (calf or shoulder)
- 2 sticks Leeks
- 2 onions
- 2 garlic cloves
- 400 grams starchy potatoes
- 500 grams Tomatoes
- 3 Tbsps olive oil
- 400 milliliters Beef broth
- salt
- freshly ground peppers
- 1 Tbsp freshly chopped parsley

Preparation steps
1.
Rinse beef, pat dry and cut into small cubes. Rinse leeks, trim and cut into rings. Peel onions and garlic and chop finely. Peel potatoes and chop into small cubes.

Scald tomatoes in hot water, drain, rinse in cold water, peel, quarter, core and dice. Heat oil in a frying pan and brown meat on all sides. Add leeks, onions and garlic and saute for 1-2 minutes.

Add broth to the pan, add potatoes and let simmer, covered, for about 1 hour.
4.
Add tomatoes and let simmer for an additional 20 minutes. Season with salt and pepper and serve garnished with parsley.
