- 2 Tbsps olive oil
- 3 ⅓ cups rump or sirloin Steak (cut into strips)
- 1 onion (chopped)
- 2 cups button Mushrooms (sliced)
- 1 cup Oat cream (or soy)
- 1 Tbsp tomato puree
- 1 tsp Dijon mustard
- 3 tsps freshly chopped thyme
- salt
- freshly ground Black pepper
- 1 lemon (juice)
- 14 ozs wide ribbon pasta

Preparation steps
1.
Heat the oil in a large frying pan. Add the steak and cook over a high heat for 2 minutes until browned. Remove from the pan and set aside.

Reduce the heat, add the onion and cook for 3-4 minutes until softened. Add the mushrooms and cook for 2 minutes, stirring occasionally.

Pour in the cream and add the tomato puree, mustard and thyme. Season to taste with salt and black pepper and heat, stirring, until hot but not boiling.
4.
Add the beef to the pan and simmer for 2 minutes to heat through. Do not boil. Add lemon juice to taste and a little hot water if the sauce is too thick.
5.
Bring a large pan of salted water to the boil and cook the pasta according to the packet instructions.
6.
Drain well and serve with the stroganoff.
