- 400 grams String bean
- salt
- 1 Organic cucumber
- 125 grams Blue cheese
- 40 grams Walnut
- 2 Tbsps apple cider vinegar
- 2 Tbsps lemon juice
- sugar
- peppers
- 3 Tbsps olive oil

Preparation steps
1.
Rinse beans and blanch in boiling salted water for about 8 minutes or until al dente. Rinse in cold water and drain well.

Rinse cucumber, trim ends and halve cucumber. Cut each half lengthwise into very thin strips using a mandoline or a peeler. Cut cheese into small cubes. Chop walnuts coarsely.
3.
Whisk vinegar, lemon juice and olive oil together, season with sugar, salt and pepper. Combine beans, cucumber and dressing, toss well. Arrange on plates and sprinkle with walnuts and cheese. Serve.
