2 Zucchini

1 sprig parsley
1 Tbsp dried herbes de Provence

Preparation steps

Rinse the summer squash, cut off the ends and cut lengthwise into slices.

Peel and crush the garlic. Rinse the thyme and parsley, shake dry, strip the leaves and finely chop. Combine with the herbs de Provence and 1/2 - 1 teaspoon of salt and mix in the oil. 

Grease a shallow dish with some herb oil and lay the summer squash slices side by side. Brush with oil and lay another layer of squash slices. Brush with more oil and repeat the process until all the ingredients are used up.

Cover and leave to marinate in the refrigerator for at least 1 hour, preferably overnight.

Drain well and cook, turning occasionally, for about 10 minutes on the grill.
