- For the cupcakes
- 2 very ripe Banana
- ⅔ cup sugar
- 1 egg
- ⅓ cup butter (melted)
- 1 ¼ cups all-purpose flour
- 1 tsp Baking powder
- 1 tsp baking soda
- For the topping
- 1 ⅔ cups cream (48% fat)
- 3 Tbsps powdered sugar
- vanilla extract
- To decorate
- 24 slices Banana
- dulce de leche (chilled)
- yellow sugar sprinkles
- diced vanilla fudge

Preparation steps
1.
For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in 24 mini muffin tins.
2.
Beat together the bananas, sugar, egg, and melted butter in a mixing bowl.

Sift in the dry ingredients and mix until smooth.
4.
Spoon into the paper cases and bake for 10-15 minutes until golden and risen. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
5.
For the topping: whisk together all the ingredients until smooth and thick.
6.
Spoon into a piping bag and pipe swirls on top of the cakes.
7.
Place a banana slice on top. Drizzle with dulce de leche and sprinkle with sugar strands and diced fudge.
