- 6 large carrots (halved)
- 6 Beets (halved or quartered if large)
- 2 Tbsps olive oil
- 1 Tbsp balsamic vinegar
- Sea salt
- freshly ground Black pepper
Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6.
2.
Place the vegetables in a roasting tin and toss with the oil, vinegar, salt and pepper.
3.
Cover with foil and cook for about 1 hour until the vegetables are tender.
4.
Serve with egg and caper salad garnished with flat-leaf parsley
