4 Tbsps olive oil
2 Red onions (cut into wedges)
2 large Apple (peeled, cored and cut into quarters)
2 Tbsps balsamic vinegar

Preparation steps

1.
Heat the oven to 200ºC (180º fan) 400ºF, gas 6.

Heat the oil in a roasting pan on the hob and add the onions. Cook for 2 minutes then add the apples and stir so everything is coated with oil.
3.
Season with salt and pepper, cover with kitchen foil and roast in the oven for 10 minutes.
4.
Remove and discard the foil, sprinkle the balsamic vinegar over the onions and apples, baste well and return to the oven for 10 more minutes.
