150 grams air-dried Sausage (such as kaminwurz or salami)
2 Tbsps butter
10 eggs
60 milliliters Whipped cream
1 handful freshly chopped parsley
salt
freshly ground peppers

Preparation steps

Peel the onion and garlic, and finely chop. Trim the chanterelle thoroughly and cut into pieces. Cut the sausage into small cubes.

Heat the butter in an oven-proof skillet and saute the sausage cubes together with the onion and garlic until the onion turns translucent. Add the chanterelle and fry for 2-3 minutes.

Whisk the eggs with the cream and parsley, and season well with salt, pepper and nutmeg. Pour the egg over the sausage mixture and bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) until golden brown, about 10-15 minutes and let thicken. Carefully remove the omelette from the pan and serve cut into pieces.
