1 kilogram new, medium potatoes
50 grams Gruyere
100 grams Quark
125 grams small Chanterelle (cleaned)
1 Tbsp butter
parsley (1 tablespoon chopped)
scallions (1 tablespoon chopped)
salt
peppers
Parmesan (firm)

Preparation steps

1.

Rinse the potatoes thoroughly, pat dry and wrap individually in foil. Place in the hot oven (180°C) (approximately 350°F) for about 40 minutes to cook. Remove and let cool slightly. Cut off a lid  and level the area slightly. Scoop out the potatoes.

Sauté chanterelles shortly in hot butter.

Cut Gruyère into small cubes and mix with quark, the potato mixture, season with salt and pepper and mix in the chanterelles. Place filling in the potato and serve sprinkled with herbs and some parmesan shavings.
