- 6 Red mullet fillets (scaled and gutted)
- 3 sprigs Dill (chopped)
- 1 tsp Coriander (crushed)
- 1 stick Celery (thinly sliced)
- ½ tsp peppercorns
- 3 lemons (juiced)
- 2 Tbsps olive oil
- ground Sea salt
- Green beans (steamed and tossed in olive oil to serve)

Preparation steps
1.
Place the fish in a shallow dish. Sprinkle the dill, coriander seeds, celery and peppercorns over the top. Add the lemon juice and olive oil. Leave to marinate for 1 hour in a cool place.

Preheat the oven grill. Remove the mullet from the marinade and place on a baking tray lined with foil. Grill for 6 minutes on either side.
3.
Sprinkle with fleur de sel and serve immediately with steamed green beans tossed in olive oil.
