300 grams ripe Apricot
100 grams ripe Peaches
200 grams black Currants
1 pkg Vanilla sugar
1 egg
40 grams powdered sugar (more, to taste)
250 grams Quark (20% fat)
1 generous pinch Orange zest
1 Tbsp Potato starch
2 Tbsps almonds (chopped)

Preparation steps

1.

Rinse, halve and remove pits from apricots and peaches. Quarter apricots and dice peaches. Rinse currants, drain and remove stems. Sprinkle almonds in a small gratin dishes. Divide fruit among dishes and sprinkle with 1 teaspoon powdered sugar.

Separate egg. Beat egg white until stiff, gradually beating in remaining powdered sugar. In another bowl, stir quark, egg yolk, vanilla sugar and orange zest until smooth. Fold in egg white and sweeten with additional powdered sugar, if desired.

Divide quark mixture over fruit and bake in a preheated oven at 220°C (approximately 425°F), about 15 minutes.

Serve hot.
